THAI BAKED SALMON

  • 1 salmon fillet (about 120g), remove bones using tweezers.
  • 2 cm piece fresh ginger, peel, slice into thin strips
  • 2 kaffir lime leaves, remove the center ribs, shred leaves finely
  • 1 stalk lemongrass, use only bottom 6 cm, chop finely
  • 1/2 clove garlic, chop finely
  • 1/2 large red chilly, remove seeds, slice
  • 1 tbsp grated palm sugar or gula melaka/jawa 
  • 1 tbsp lime or lemon juice
  • 2 tbsps light soy sauce
  • 1 1/2 tsps fish sauce
  • cooked rice and steamed green vegetables, to serve


COOK


  1. Preheat oven at 220 C.
  2. Place salmon on a lightly greased foil sheet on oven tray. Top with all ingredients. Fold up foil to form a neat parcel. Bake for 8 to 10 mins.
  3. Serve with rice and steamed green vegetables.
