- 1 salmon fillet (about 120g), remove bones using tweezers.
- 2 cm piece fresh ginger, peel, slice into thin strips
- 2 kaffir lime leaves, remove the center ribs, shred leaves finely
- 1 stalk lemongrass, use only bottom 6 cm, chop finely
- 1/2 clove garlic, chop finely
- 1/2 large red chilly, remove seeds, slice
- 1 tbsp grated palm sugar or gula melaka/jawa
- 1 tbsp lime or lemon juice
- 2 tbsps light soy sauce
- 1 1/2 tsps fish sauce
- cooked rice and steamed green vegetables, to serve
COOK
- Preheat oven at 220 C.
- Place salmon on a lightly greased foil sheet on oven tray. Top with all ingredients. Fold up foil to form a neat parcel. Bake for 8 to 10 mins.
- Serve with rice and steamed green vegetables.
